If you are staying anywhere between Kissamos and Georgioupoli, you have the best choice of olive oil tours on Crete. That is not regional pride, it is inventory: the western third of the island holds two protected designation of origin zones for olive oil — Kolymvari Chanion Kritis and Chania Kritis — a dense resort coast that makes daily hotel pickups viable, and the Olive Tree of Vouves, which is the only olive tree on Crete that people travel specifically to see.

What Kolymvari PDO actually means

Kolymvari is one of six Cretan areas with protected designation of origin status for its oil, and the designation is not decoration. It fixes the growing area, and the oil is made from Koroneiki — the small-fruited variety that dominates Greek planting and gives a notably bitter, peppery result. Standing in a Kolymvari mill and tasting a Kolymvari PDO oil is about as direct a line between a place and a flavour as food tourism offers.

About that tree

Two of the western tours stop at the Olive Tree of Vouves, in the village of Ano Vouves inland from Kolymvari. It is a hollowed, sculptural trunk that still bears fruit, and it is worth the stop. It is also routinely described as the oldest olive tree in the world, and that part deserves care: tree-ring analysis establishes it at at least 2,000 years, the 3,000-to-5,000-year figures are estimates, its heartwood is long gone so radiocarbon dating cannot be done, and there is no agreed scientific method for dating an olive tree. Other trees elsewhere claim the same title.

When to come

Between November and February the Kolymvari mills are pressing and you can watch fruit go in one end and oil come out the other. From roughly March the presses are clean and idle, the tours continue, and the tasting does the work.
